Eel in cooking oil breaded in corn and rice flour, crunchy tarallo, eel demi glacé, lemongrass stew, onion, matcha tea and glasswort
SHRIMP & TOWER
Cuttlefish ink ravioli filled with Torre cheese and hazelnuts, Mazara red prawn bisque, lime marinated prawns and hazelnut air

Octopus cooked at low temperature and then seared, parsnip puree, green bean, nectarine in soused, ginger zest and ginger bitter
